CHICKEN FAJITA ON A STICK

Ingredients   metric units

  • 1 lb. chicken breasts, boneless, skinless, cut into cubes;
  • 2 bell peppers, cubed;
  • 1 red onion, cubed;
  • 4 tbsp. olive oil;
  • Zest and juice of 1 lime;
  • 1 tbsp. chili powder;
  • 2 tsp. ground cumin;
  • 2 garlic cloves, minced;
  • Fresh cilantro, minced;
  • Sea salt and freshly ground black pepper;
  • Wooden or metal skewers;

Preparation

  1. In a small bowl, combine and whisk together the olive oil, lime juice, lime zest, chili powder, cumin, garlic, salt and pepper to taste.
  2. Place the chicken in a large bowl. Pour the chili-lime sauce over the chicken and allow to marinate for 25 to 30 minutes.
  3. Thread the cubed chicken, bell pepper and red onion onto the skewers.
  4. Preheat the grill to medium-high.
  5. Place the skewers on the grill and cook covered for 12 to 15 minutes, turning skewers every 4 minutes or so.
  6. Garnished the chicken fajita skewers with minced cilantro and fresh homemade salsa.
